We recently partnered up with Birchtree Catering for a portfolio shoot highlighting some of their dishes available for weddings and events! This shoot was photographed at Globe Dye Works in Philadelphia.
From chef Rasa:
1. Honey Cakes
Lancaster wildflower honey gives these cakes intense flavor and color, with green meadows butternut and hubbard squash. We like serving them with whipped double cream infused with ginger and cinnamon, and candied pecans.
2. Hen of the Woods Tarts
All local mushrooms- hen of the woods, oyster, shiitake mushrooms with housemade ricotta, local pecorino and herbs in crisp puff crust.
3. Prosciutto Crostini
Freshly baked house baguette topped with our creamy herb ricotta, pickled smokehouse apples and prosciutto di parma.
4. Forest Mushroom Stew
We start with toasted farro, roasted maitake and chanterelle mushrooms, charred baby carrots, romanesco and a tangle of herbs, and pour over cream of porcini bisque, with sage and blue basil.
